BROCCOLINI WITH FRESH MOZZARELLA

Ingredients:
1 lb Italian broccolini, ends trimmed
1/2 lb freah mozzarella, room temp.
3 tbsp extra virgin olive oil
1/8 to 1/4 tsp crushed red pepper flakes
1/4 cup shallots, thinly sliced
1/2 tsp kosher salt
fresh ground black pepper to taste
2 tbsp toasted pinenuts
1 tbsp fresh parsley, coarsely chopped
 

Directions:

  1. Bring pot of salted water to boil. Cut broccolini into 3 inch pieces.
  2. Add to the boiling water and cook 2 minutes or until just tender.
  3. Cut ball of mozzarella in half, then again into 1/4 inch slices, set aside.
  4. Heat olive oil in 10 to 12 inch skillet over medium heat.
  5. Saute' shallots and red pepper flakes.
  6. Add broccolini, salt & pepper, toss 2-3 min or until heated.
  7. Remove for heat and tuck pieces of mozzarella into the brocolini.
  8. Add pine nuts and parsley, serve immediately.
