Ingredients:
1 Tablespoon plus 1 teaspoon magarine
4 cups thinly sliced zucchini, unpeeled
1/2 cup chopped onions
2 Tablespoons dried parsley flakes
1/4 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/8 teaspoon salt
1/8 teaspoon pepper
2 eggs, slightly beaten
6 ounces Mozzarella cheese, shredded
1 teaspoon Dijon mustard
Directions:
- Melt maragine in a large nonstick skillet over medium heat. Add zucchini and onionsand cook 10 minutes, stirring frequently until vegetables are tender-crisp. Remove from heat.
- Preheat oven to 350 degrees.
- Stir parsley, garlic powder, oregano, basil, salt & pepper into zucchini.
- In a large bowl, combine eggs, mozzarella cheese and mustard.
- Add zucchini mixture and stir until mixture is combined.
- Pour into a casserole dish that has been sprayed with a nonstick cooking spray.
- Bake, uncovered 35 minutes or until lightly browned on top.
