Ingredients:
1 lb boneless chicken breast
1 lb penne pasta
2 teaspoons olive oil
1 cup marinated artichoke hearts
1/2 teaspoon dried oregano
1/2 cup Kalamata olives
1/4 teaspoon salt
1/4 cup chopped Italian Parsley
1/4 teaspoon pepper
1 large tomato chopped
1/4 cup fresh shredded parmesan
salt & pepper to taste
Dressing
6 tablespoons fresh lemon juice
1 cup olive oil
1/4 teaspoon cayenne pepper
2 teaspoons dried oregano
1/2 cup mayonnaise
1/2 cup red onion minced
Directions:
- Rub chicken with olive oil & sprinkle with oregano, salt & pepper.
- Grill until done, cool to room temperature, cut into cubes.
- Prepare dressing, place cubed chicken in dressing & marinate for one hour, stirring occasionally.
- Cook pasta, rinse with cold water and drain.
- Toss together chicken dressing mixture, cooked pasta and remaining ingredients. Enjoy!
